Dairy Division, Old School Cheesery produces, markets and distributes in Alberta a variety of cheeses including various flavoured cheddars.
Specialty cheeses such as,
- Bourdon (Alpine hard cheese covered in honey)
- La Riviere Vermilion (Blue Cheese)
- Bebe Lune (Brie)
- Eclipse (Vegetable ash covered brie)
and of course our very popular cheese curds.
In the works as a solution to minimizing waste, we are exploring the possibilty of starting a series of Vodka products using the Old School Cheesery whey which is produced during the process of making the cheese products.

Our Cheeses
Cheese Curds
We have daily fresh cheese curds made from pasteurized locally produced cow's milk.
Ingredients
All natural ingredients are used to make our cheese curds.
Flavours
Regular, Garlic, Dill, Chipotle, BBQ, Black Peppercorn
Mild Cheddar
Our mild cheddar is made fresh and has a soft creamy flavour.
Smoke Cheddar
This cheddar is cold smoked for 5 hours using Applewood chips.
Dill Cheddar
Our dill cheddar is flavoured using dill.
Our garlic cheddar is infused with fresh garlic cloves.
Garlic Cheddar
Peppercorn Cheddar
Our peppercorn cheddar is seasoned with black peppercorn.
Chipotle Cheddar
Our chipotle cheddar is flavoured with pureed chipotle peppers..
Beer Infused Cheddar
Our beer infused cheddar is made seasonal with beer made by our friends at Ribstone Creek Brewery. In the summer we use Abbey Lane, a light beer and in the winter we use Old Man Winter, a porter.
Canadian Style Brie
Our Canadian style brie is named "Bebe Lune" after the owners youngest sister, this was her childhood nickname. This brie is soft, creamy and mild in flavour.
Eclipse Vegetable Ash Brie
Our Canadian style brie covered in vegetable ash is named Eclipse. This marbled brie has a smoky nutty flavour while maintaining its creamy texture.
Harvest Moon Smoked Brie
Our smoked brie is cold smoked using Applewood chips for 6 hours leaving it with a firm texture and a salty smoky flavour.
We named our hard cheese "Le Bourdon". It is aged in nature's liquid gold "Honey", sourced from our local honey producers Lazy Bee Honey in Irma. This cheese is firm and has a sharp taste with a hint of sweetness.
